Texas Sheet Cake Cookies



Hey y'all! 

I got the recipe for these cookies from the amazing blog called
These cookies are like heaven in your mouth. 
They have a consistency a bit like
 brownies with an icing that hardens like the Magic Shell 
 you put on ice cream. The baseball team 
adored them! But I do recommend that you double the recipe
 if you're making them for a 
team of teenage baseball players and their coaches. I
 had enough for the boys and the coaches to have one each
 but they weren't very happy that all they got was one! But that is okay
 because they still adore me! Now I'm sure you guys are just
 ready for the recipe! Here it is!


 Get all of your ingredients together. I like to pre-measure everything 
beforehand. It makes it easier to add the ingredients when they're all ready.

Put the butter and sugar in a bowl then mix it until it is fluffy. Then add the two eggs and mix until combined. 
Add in the flour a little at a time


While the batter is mixing, start melting the chocolate chips. Put the chips in a microwave bowl and microwave them for 30 seconds at a time. It took two cycles to get the chips melted. 

 Mix the melted chocolate in with the batter.

Scoop the dough onto a greased cookie sheet. Pop the min the over for 7-8 minutes. DO NOT overbake them. 

Now you're going to pour icing on the cookies so I put a wire rack on a cookie sheet that is covered with wax paper. This minimizes the mess.

 Once the cookies are done, move them to the wire rack set up. You'll make the icing while they're cooling. 
Put the butter, milk and cocoa powder in a medium saucepan over medium heat.

 This is what it looks like when it is almost done.

Whisk in the powdered sugar until all the lumps are gone.

 This is about what it should look like.

Just pour the icing over the cookies, let them set and you're done!



Texas Sheet Cake Cookies

Yield: 24 Cookies
Ingredients

Cookies:
  • 1/2 C. Butter, Room Temperature
  • 1/2 C. Granulated Sugar
  • 1 Egg
  • 1 tsp. Vanilla
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 1/3 C. Flour
  • 1/2 C Semi-Sweet Chocolate Chips

Icing;
  • 1/2 C. Butter
  • 2 Tbsp. Cocoa Powder
  • 3 Tbsp. Milk
  • 2 1/2 Powdered Sugar
Cooking Directions


Cookies:
  1. Preheat oven to 350 degrees
  2. Grease cookie sheet
  3. In a bowl beat the butter and sugar until fluffy
  4. Add the egg and mix until combined.
  5. Slowly add in flour while the mixer is on low.
  6. Melt chocolate chips in a microwave safe bowl for 30 seconds. Continue the cycle until they are melted. Stir after every cycle.
  7. Mix melted chocolate into cookie dough until mixed.
  8. Drop dough onto the greased cookie sheet and bake for 7-8 minutes. DO NOT overbake.
  9. Transfer to wire rack to cool.

Icing:
  1. In a medium pan combine butter, cocoa powder and milk over medium heat.
  2. Remove from heat and whisk in powdered sugar.
  3. Pour icing over cookies and allow icing to set before serving.

  1. Mary Beth, sounds yummy. I will need to try them for Joshua's team. I recommend that instead of greasing your sheets, that you use parchment paper instead. It is found in the same aisle as waxed paper. It doesn't burn, bakes great cookies, clean up is a breeze (as you just throw it away) AND you can use it multiple times for your entire batch of cookies. Works every time. Great blog!
