{Recipe} Mini Tarts




Hey guys! It's a new week which means new recipes! Your Home Based Mom, one of the blogs I follow, posted a recipe for Lemon Curd which sounded amazing so I got the idea to make lemon tartlets! But I also had to make chocolate tartlets since some people don't like lemon. What weirdos. Anyways I've also seen a lot of people make the tart shells out of sugar cookie dough so I decided to give that a whirl and the results are amazing. This is kind of a Franken-recipe made from recipes from different sources but they turned out great. Check them out: 



Lemon Tarts
  • 1 roll of Pillsbury Sugar cookie dough
  • 1 C. granulated sugar
  • 2/3 C. lemon juice
  • 1 Tbsp. lemon zest
  • 1/2 C. butter
  • 3 eggs
1.) Pre-heat the oven to 350°

2.) Roll the dough into small balls and place in a greased muffin tin

3.) Bake according to the instructions on the package. When the shells are done use the handle of a wooden spoon to push in the center of the shell to make a well. Let cool. 

4.) Mix together eggs, sugar, lemon juice and place in a double boiler*. Stir until thickened.

5.)Add in the butter and lemon zest. Refrigerate until it thickens.

6.)Once the shells have cooled, spoon the lemon curd into the shells

7.)Enjoy!





Make sure to use a glass bowl for the ingredients in the double boiler. Metal will give it a metallic taste.


Chocolate Tarts

  • 1 roll of Pillsbury Sugar cookie dough
  • 3/4 C. semi-sweet chocolate chips
  • 1/2 C. heavy cream
1.) Pre-heat the oven to 350°

2.) Roll the dough into small balls and place in a greased muffin tin

3.) Bake according to the instructions on the package. When the shells are done use the handle of a wooden spoon to push in the center of the shell to make a well. Let cool.

4.) Measure the cream into a glass and microwave for 90 seconds.

5.) Pour the cream over the chocolate chips and stir until all the chips are melted.

6.) Immediately pour the chocolate into the cooled shells

7.) Refrigerate until set and Enjoy!
